BROCCOLI AND YELLOW PUMPKIN SALAD RECIPE WITH A MANGO BASE

This recipe is a combination of ingredients put together into a unique blend for all Health oriented people. 

With Covid looming over and a lot of staying at home, there are a lot of us resorting to cooking and trying out new recipes. Cooking is an amazing stress reliever and a way of keeping ourselves meaningfully occupied. The cooking process also brings joy in the course of mundane activity when creativity sparks in to try out new recipes, alter recipes, and bundle in different things we have rolled in from different recipes. The ingredients, the order of the cooking process makes the journey interesting and when the food melts in our mouth once made is enough to relish the entire experience. This recipe is created based on our own creativity and please do give it a try at home. It is an easy to make and healthy snack, not very filling but tastes amazing and can be made especially when you want to cook a three course meal. 

THE MAIN INGREDIENTS

So today I am going to talk about a salad recipe. The main ingredients used are Yellow Pumpkin, Broccoli, Cabbage, Apple Olives and Mango. This provides a mixture of different tastes, yellow pumpkin gives a sweet taste, Broccoli and cabbage have their own flavours, olive gives a little sour taste along with the sweet sourness of apple and sweetness of mango. You may also add vegetables and fruits of your choice which would change the flavour of the salad according to your taste. Flax seeds and chia seeds are used as dressing ingredients.


THE DRESSING

The dressing is based on mango essence as the base. Below are the ingredients used:

  • 2 teaspoons of Coconut oil
  • Pinch of salt
  • Quarter teaspoon of Pepper powder
  • Mango juice
  • Pasta Seasonings (Oregano, Chilly Flakes, Thyme, Rosemary)

Pour two teaspoons of coconut oil in a bowl.I used Coconut oil as it provides a nice flavour, but you can also use groundnut oil. Add a pinch of salt and pepper powder. We squeezed the juice of a fresh mango, if not available you could always use mango essence, though flavour would be better with a fresh mango. Pasta seasoning is available in the shops or you cook choose any of the above italian seasonings as per your preferences to create the flavour of your choice. This is what the dressing looks like.


SALAD PREPARATION

  • Take the tawa and put half a teaspoon butter in it.
  • Add the vegetables, yellow pumpkin, broccoli and cabbage and let it cook till it is almost cooked. For the quantity I have shown in the above picture, I let the vegetables cook for about 10 minutes.
  • Add the required amount of salt and pepper according to the quantity of vegetables as per your taste buds. I put quarter teaspoon of salt and quarter teaspoon of pepper.
  • Switch off the gas and add Apple, Olives and mix well. Below is a picture of the salad at this stage.

  • After this add mango on the top and shift the salad to the bowls.
  • Sprinkle flax and chia seeds on the bowl and they are ready to serve. You could also sprinkle cut almonds and any other seeds or nuts of your choice.

In this recipe, all the flavours blend together proportionately to give a more sweeter flavour with the mango flavour dominating. Cooking together always creates memorable moments and it leaves behind a sense of joy which would put a smile on our face when recalled. This is a fun recipe and cooking is fun when done together.
