CHOCO LAVA CAKE RECIPE WITHOUT OVEN

The chocolate melts in your mouth along with the cake! 

Desserts always bring Joy. Whenever we are not feeling good, immediately we look for sources of sugar to uplift our moods. Desserts have a way of breaking into our hearts and replenishing ourselves with a fresh dose of energy and happiness especially when made and served by the hands of a loved one. One of the relevant and most favorite forms of dessert is cake. Cakes are generally made of all purpose flour as it is the finest and provides a spongy texture. In my recipe today, we are going to look at a healthier version of Choco lava cake with no maida, no refined sugar, no dairy milk, no eggs, and no oven so they can be even made in an Appam pan.

The emotion desserts emanate out of us mixed with the psychological peace of being a healthy alternative feels good as we can be guilt free of not having taken a cheat day and not worry about having to do extra work out for weight loss. Being the healthier alternative, we use whole wheat flour instead of all purpose flour or maida, coconut sugar or brown sugar instead of refined sugar, cashew milk instead of dairy milk. Almond milk can also be used as a substitute but the almond skin has to be peeled. So those with lactose intolerance can also enjoy the delicacy. 

THE MAIN INGREDIENTS

Following are the main ingredients to make Choco Lava Cake recipe without an oven:-

  1. 10 Cashews
  2. 1 cup Coconut Sugar
  3. 1 teaspoon vanilla essence
  4. 2 tablespoons coconut oil 
  5. Half a lemon
  6. ¾ cup of whole wheat flour
  7. ½ teaspoon baking powder
  8. ⅛ teaspoon baking soda
  9. ¼ unsweetened cocoa powder

HOW TO MAKE CASHEW MILK

  1. To make cashew milk, first take 10 cashews. Soak the cashew nuts in water for 10 minutes. 
  2. Add quarter cup water to finely grind them in the mixer to form a paste like texture. 

THE CAKE BATTER MIXTURE

  1. Take 1 cup of tightly packed coconut sugar and grind it into refined powder in the mixer.
  2. Add the sugar, cashew milk, 1 teaspoon vanilla essence, 2 tablespoons of coconut oil and mix well in a bowl. Squeeze half a lemon into the mixture and mix.
  3. Add ¾ cup of whole wheat flour, ½ teaspoon baking powder, ⅛ teaspoon baking soda, ⅛ teaspoon pink salt and give it a light mix.
  4. Sieve ¼ cup of cocoa powder into the mixture and mix the batter well to form a thick batter of pourable consistency.

  1. Take the appam pan and apply coconut oil to form a layer between the batter and the pan. Pour in one tablespoon of batter in each mould and place one piece of dark chocolate in between and pour one more tablespoon of batter over it.

  1. Cover the pan with the lid and let it cook for 10 minutes. Then, open the lid and flip the cakes and let it cook for another 5 minutes.
  2. Once cooked, turn off the heat and allow the cakes to cool down. 

This is a simple recipe that can be used as a healthy snack for children and adults during the course of the day. Children crave a lot of chocolate and this is a healthy and filling method of ensuring that they eat. The dark chocolate is a little bitter depending on the cocoa content. More cocoa the better but the bitterness is well subdued by the sweetness of the cake once it cools down.
