This is a traditional Kerala recipe with coconut milk and Indian spices.

THE MAIN INGREDIENTS
The following are the main ingredients required for the preparation of Kerala style traditional Chicken roast recipe:-
- Chicken
- One and half inch ginger
- Curry leaves
- 4 Small onions
- 12-15 Garlic Cloves
- 2 Green Chillies
- Curry Leaves
- Pieces of Coconut
THE INGREDIENTS FOR GARAM MASALA
- Half teaspoon sonph
- Quarter teaspoon Jeera or Cumin seeds
- 1-inch Cinnamon stick
- Half teaspoon whole black peppercorns
- One Mace
- One-third of a nutmeg
- 4 whole cardamoms
- Half teaspoon Cloves
- Half teaspoon Stone Flower
HOW TO MAKE COCONUT MILK
Add grated coconut to the mixer, add one cup of water as required, and grind well. Use the sieve and squeeze the coconut milk transferring it to a new container. Ensure the milk is of a thicker consistency and that you don’t add too much water.
HOW TO MAKE KERALA STYLE CHICKEN ROAST
- Mix the masala items as mentioned in the garam masala ingredients above being sonph, cumin seeds, cinnamon stick, whole peppercorns, mace, nutmeg, cardamom, cloves, and stoneflower. Grind them coarsely. You can choose to use Garam masala powder or freshly grind them which gives a much better taste. Transfer half of the masala into a bowl. Leave the rest in the mixer and add ginger, curry leaves, garlic, green chilies, shallots and grind it coarsely. The masala looks like the one given below.
- Add the ground masala, half teaspoon turmeric powder, one teaspoon of chili powder, one teaspoon of salt, juice of 1 whole lemon to the chicken and mix the masala well. Marinate well and keep aside for 25 minutes.
- Take the pan and pour coconut milk. Add the marinated chicken and stir well. Cover with lid and cook on a medium flame for 5 minutes.
- Stir till chicken is cooked for about 15 minutes as required. If you want it as a curry, you can take it off at this stage. If you want to roast it well, stir till it dries. Add the kept aside freshly ground garam masala and a few curry leaves to enhance the flavor.
- Mix well once the chicken starts to roast to ensure that it is not sticking to the bottom of the pan. Let it cool and serve.
