APPLE CINNAMON CAKE WITHOUT OVEN, NO MAIDA, NO EGGS

The Fruity flavour of apple cake with cinnamon is a pastry person’s delight.

Desserts are always delightful. Everyone loves chocolate but once in a while, we like to try out different flavors as well. This apple Cinnamon cake is a much healthier differently flavored alternative. 

THE MAIN INGREDIENTS

The following are the main ingredients to make Apple Cinnamon cake :-

  1. 2 Apples
  2. 1 Lemon
  3. One third Nutmeg
  4. One Cinnamon stick
  5. Whole wheat flour
  6. Organic Jaggery 
  7. Cashew Milk

HOW TO MAKE APPLE CAKE WITHOUT OVEN, NO EGGS, NO MAIDA

  1. Take the container and grease it with Coconut oil to prevent the cake from sticking onto the surface of the container.
  1. Take 2 apples, peel the skin and chop them into rough pieces. Pour one whole lemon on top and mix well, to prevent coloration of the apple as well as a distinct flavor.
  1. Soak 10-12 cashew nuts in water for 10 minutes. Add a quarter cup of water and blend well in the mixer to get plant-based cashew milk. You may use animal milk if you are comfortable with the same.
  1. Add one-third of a nutmeg and cinnamon stick and grind it in the stone grinder. The flavor of freshly and finely ground nutmeg and cinnamon in the stone grinder gives an amazingly distinct flavor to the cake.
  1. Add three fourth cup of cold-pressed coconut oil, chopped apples, freshly ground nutmeg and cinnamon powder, 2 fat pinches of salt, one cup of organic crushed jaggery, half of the cashew milk.

  1. Add 2 cups of whole wheat flour in a separate bowl. Add half teaspoon baking soda, three fourth teaspoon baking powder, and mix well with the whole wheat flour. Once nicely mixed, pour in the wet ingredients from the mixer little by little and fold the batter nicely. Mix and fold till we get the right consistency. 
  1. Add the remaining cashew milk and fold the batter well with a thick but pourable consistency. Tap a little bit to remove air bubbles.

  1. Take an aluminum or black metal-coated container and place an aluminum plate. The aluminum plate helps prevent direct heating. Once heated, keep the container with the cake batter on top and cover with a lid for 15 minutes. You can see the cake rise.

  1. Let the cake bake for another 30-45 minutes. Take a knife and insert it into the cake to check if the cake has completely cooked within. If not, keep for another 15 minutes till it is completely cooked.
  1. If you have an Oven, preheat the oven and place the cake inside at 180 degrees celsius for 30 minutes and the cake should be ready.
  1. Remove from the pan or oven, flip it over and allow it to cool completely. You may cut the cake and serve it with chocolate syrup or honey, to the dressing of your choice.

Apple cinnamon cake is one of my favorite fruit cakes, especially when served with the dressing of my choice. You may try this out with whipped cream or almond or peanuts cut into chunks for the crunchiness melting along with the softness of the cake.
