Chicken Salad with Indian Spices, good source of protein and fibre!

Cooking can create wonders. The food we intake is very important as it determines how our body works and is very closely interlinked with the mind and the body. The mood in which we are cooking influences the taste of the food and it’s scientific. The food tastes yum when we enjoy cooking. Being able to cook and when a loved one compliments the food is a treasured feeling among women irrespective of them being career oriented women or homemakers. It’s all about our mindset and perspective. If we think cooking is easy and interesting, it is that but if we consider that a strenuous task then that is what it is. There is monotony in cooking but once we start to enjoy the push and pull of cooking things would work out well in our favour. Here is a simple salad recipe which is very easy to make and is a fruit to the taste buds. 

THE MAIN INGREDIENTS

The following are the main ingredients to make the South Indian Chicken Salad Recipe:-

  1. Boneless Chicken
  2. Broccoli
  3. Zucchini
  4. Red Capsigum
  5. Carrot
  6. Paneer
  7. Mushroom
  8. Cabbage
  9. Babycorn
  10. Italian herbs for seasoning

HOW TO MARINATE THE CHICKEN

  1. Clean and cut the chicken into small pieces or you can purchase boneless chicken from the supermarket. Add quarter teaspoon salt, quarter teaspoon chilli powder and quarter teaspoon pepper to the chicken and marinate for 15-30 minutes. You may squeeze a few drops of lemon into the marinade as you wish.

HOW TO MAKE SOUTH INDIAN CHICKEN SALAD RECIPE

  1. Take the vegetables and cut them into small pieces. Cut the broccoli diagonally, mushroom vertically and other vegetables both vertically and horizontally. Pour butter in the pan and saute the vegetables. Fry the paneer separately before hand and add it towards the end when the vegetables are little more than half cooked.
  1. Add 2 pinches of salt, one eighth teaspoon of pepper, quarter teaspoon of pasta seasoning consisting of oregano, chilli flakes and other Italian spices. You may add thyme and rosemary as per your taste.
  1. Take the marinated chicken and saute the chicken separately till it is cooked.
  1. If there are vegetarians in the house, you can take the vegetable salad and set it aside for them and then add chicken. Once the vegetables are three fourth cooked and chicken is almost done, mix them together and check the taste. Add flavours according to the quantity that you are making if anything seems to be lacking. 
  1. Once you feel the aroma of the salad, you may switch off the gas and serve in a bowl. You may sprinkle mint leaves or coriander leaves as per your choice over the salad for flavour as well as better presentation to make it look more appetizing. 

Salads taste yum but also leave us feeling light. So this may not be sufficiently filling. If you are concerned about weight loss and you are dieting then this salad is just the right choice for you.
